ABOUT Badaami Tangdi Kabaabs... RECIPE

Badaami, as the name goes suggests the use of Badaam or Almonds in it. This particular recipe of mine is a favourite in our family and friends circle. This is the most loved one by all of them. We usually do this on a Barbecue on every weekend family outings here in KSA. The Corniche here adds to that perfect ambience as well. The joy of relishing these juicy and succulent Badaami Tangdi Kabaabs at this place is just unparalleled. It is a place that has been associated with so many memories for me and my family. Ingredients Serving: 6

  1. 15-18 Chicken drumsticks
  2. 1 inch Ginger Piece
  3. 6 garlic cloves
  4. 18 Almonds soaked well and made into a paste
  5. 1 tbsp red chilli powder
  6. 1 tsp turmeric powder
  7. 1 tbsp lemon juice
  8. 1 tbsp Ground Coriander seeds roasted
  9. 1 tbsp Ground Cumin seeds roasted
  10. 1/2 cup hung curd
  11. 1 1/2 tbsp salt
  12. 1 tbsp tandoori masala
  13. 4 green chillies
  14. 1 tsp chaat masala

Instructions

  1. Clean and trim excess fat and skin from the thighs . Dry them with clean , absorbent kitchen towel . Make three to four long deep incisions. Add lemon juice and set aside. Pound ginger and garlic to a paste along with Green chillies.
  2. Marinate chicken drumsticks with all the ingredients mentioned and refrigerate for one to two hours. Skewer marinated chicken drumsticks or and roast in a moderately hot tandoor or alternatively bake in a preheated at 220° for five minutes at first. Later reduce the oven temperture to 180°and further cook for 20-25 minutes or till completely cooked .
  3. Serve hot sprinkled with chaat masala and lemon juice. Naans go best with this one but you can serve with anything you like.
