ABOUT Galouti Kebabs/Gola Kabaabs RECIPE

Galouti kebabs or Galawati Kababs is a traditional Awadhi recipe popular in Lucknow. It means melt in mouth . According to an old saying , it was specially created for the aging Asaf-Ud-Daulah who had weak teeth but was an ardent meat lover .

Ingredients Serving: 6

  1. 400 gm minced mutton
  2. 20 gms or 2 tbsp of raw papaya paste
  3. 5-6 tbsp Ghee
  4. 2-3 tbsp Roasted gram flour
  5. 1/2 cup curd
  6. Salt to taste
  7. 1 tbsp kewra water
  8. for dry masala
  9. 3 pieces red chillies
  10. 1/2 tbsp coriander seeds
  11. 1 tbsp Poppy seeds
  12. 2 tbsp dry coconut powder
  13. 2 cinnamon sticks
  14. 10 almonds, roasted and ground
  15. For the masala paste
  16. 2 tbsp ginger garlic paste
  17. 1/2 tbsp black pepper
  18. 2 small raw onions
  19. 1/2 cup fried and crushed onions
  20. 1 cardamom and clove
  21. 1 tsp garam masala
  22. 1/4th tsp mace and nutmeg powders


  1. Grind the mince meat into a fine paste and marinate it with raw papaya paste and salt for an hour.
  2. After an hour, add the dry masala powder, masala paste and gram flour to the marinated meat .
  3. Shape them into any shape of your choice and shallow fry them in ghee , turning them occasionally . Remember to put on the lid . This will be ready in 15 mins .
  4. Place a burning coal in the middle of the pan wherein the meat will be cooked. Pour a spoon of ghee on the burning coal and put the lid on .
  5. Keep this undisturbed for 10 mins . This will allow the smoke to spread evenly.
  6. Remove the coal.
  7. Serve them hot garnished with onion rings or slices of tomatoes and capsicum.
