Galouti Kebabs/Gola Kabaabs

Ingredients to make Galouti Kebabs/Gola Kabaabs

  • 400 gm minced mutton
  • 20 gms or 2 tbsp of raw papaya paste
  • 5-6 tbsp ghee
  • 2-3 tbsp Roasted gram flour
  • 1/2 cup curd
  • salt to taste
  • 1 tbsp kewra water
  • for dry masala
  • 3 pieces red chillies
  • 1/2 tbsp coriander seeds
  • 1 tbsp poppy seeds
  • 2 tbsp dry coconut powder
  • 2 cinnamon sticks
  • 10 almonds, roasted and ground
  • For the masala paste
  • 2 tbsp ginger garlic paste
  • 1/2 tbsp black pepper
  • 2 small raw onions
  • 1/2 cup fried and crushed onions
  • 1 cardamom and clove
  • 1 tsp garam masala
  • 1/4th tsp mace and nutmeg powders

How to make Galouti Kebabs/Gola Kabaabs

  1. Grind the mince meat into a fine paste and marinate it with raw papaya paste and salt for an hour.
  2. After an hour, add the dry masala powder, masala paste and gram flour to the marinated meat .
  3. Shape them into any shape of your choice and shallow fry them in ghee , turning them occasionally . Remember to put on the lid . This will be ready in 15 mins .
  4. Place a burning coal in the middle of the pan wherein the meat will be cooked. Pour a spoon of ghee on the burning coal and put the lid on .
  5. Keep this undisturbed for 10 mins . This will allow the smoke to spread evenly.
  6. Remove the coal.
  7. Serve them hot garnished with onion rings or slices of tomatoes and capsicum.
