Traditionally in the Galouti kababs the kheema is marinated with Raw papaya and some exotic spices and then fried in ghee.Ideally more than 100 spices go into these kababs.I have used a few essential here.

Ingredients Serving: 6

  1. Mutton kheema 1 kg
  2. Green papaya paste 4 tbsp
  3. Browned Onion paste 3 tbsp
  4. Gingergarlic paste 2 tbsp
  5. Cardamom pwdr 1 tbsp
  6. Chilli pwdr 1 tsp
  7. Chana pwdr 2 tbsp(black chana that we eat)
  8. Maze pwdr 1/2 tsp
  9. Coriander pwdr 1 tbsp
  10. Kabab cheeni 1/2 tsp
  11. Desicated coconut 2 tbsp
  12. Cinnamon pwdr 1 tsp
  13. Garam masala 1/2 tsp
  14. Salt to taste


  1. Wash clean and drain the kheema
  2. Add all the spices mentioned and marinate the kheema for 24 hrs
  3. Once the kheema is well marinated, pulse the kheema in a chopper .
  4. Do not over grind.we just need a smooth paste
  5. Heat a griddle and pour pure ghee and shape the kababs and fry them
  6. Be very gentle while turning as these kababs are very delicate
  7. Image of kabab chini,resembles like black peppers but with a tail
