Delicious Mutton Kebab from Awadhi

Ingredients Serving: 6

  1. 400g - 450g minced mutton
  2. To grind
  3. 3/4 cup thinly sliced fried onions
  4. 1 tsp chopped ginger
  5. 1 tbsp chopped garlic
  6. 50g raw papaya cubes
  7. 2 black cardamom seeds
  8. 4-5 peppercorns
  9. 1/2 tsp cinnamon pieces
  10. 2 tbsp roasted dessicated coconut
  11. 4-5 green cardamom
  12. 2 mace blades
  13. 1 tsp Chilli Powder
  14. Salt to taste
  15. 1/4 grated nutmeg
  16. For kebab
  17. 1 beaten egg
  18. 1/4 chopped coriander leaves
  19. 1 tbsp finely chopped green chillies
  20. 4 tbsp roasted gram flour
  21. Ghee for frying
  22. 1 tsp lemon juice to sprinkle

Instructions

  1. Grind all ingredients mentioned under to grind section. Add to minced mutton. Knead for 7-8 minutes so that mutton gets marinated well. Keep aside for 2 hours
  2. Add besan, egg, green chillies, coriander leaves to marinated mutton. Mix well. Knead like dough. Add additional besan if required
  3. Take small portion. Shape like ball and flatten it. Do until completed
  4. Refrigerate for 30 minutes. Fry in ghee until brown on all sides on medium heat.Do not substitute ghee for oil. Ghee brings right flavour for kebabs
  5. Sprinkle lemon juice and serve warm
