ABOUT Vari Nooka Upma – Broken rice upma RECIPE

A traditional upma made with rice rava and lentil, making it healthy and gluten free. An ideal food for breakfast and dinner. Due to its long shelf life it is suitable for packed travel food on long journeys. Also popular for tiffins on Pooja days under ‘No onion and No garlic’ category.

Ingredients Serving: 4

  1. Broken rice rava - 1 cup
  2. Moongdal - 1/3 cup
  3. Oil - 3 tbsp
  4. Mustard seed - 1/2 tsp
  5. Cumin seed (jeera) - 1/2 tsp
  6. Red chilly - 3
  7. Hing - 1/2 tsp
  8. Curry leaves - few sprigs
  9. Water - 2 1/2 cup
  10. Salt as per taste

Instructions

  1. Soak the Moongdal for 20 minutes.
  2. Heat the oil in a heavy bottomed cooking pot. Add Cumin seeds, Mustard seeds and allow them to crackle. Add Red Chillies, Hing, Curry leaves and stir for a minute.
  3. Add Moongdal and saute for about 3 minutes on medium heat.
  4. Slowly pour the Rice and the Rava and stir occasionally to avoid lumps.
  5. Cook for 15 minutes on a low flame till required consistency is reached.
  6. Serve hot.
