ABOUT Leftover cashew upma vada RECIPE

A delicious makeover to the boring leftover upma. Once the upma is cold no one is ready to have another serving and thus remains the poor upma. But this garelu or vada is a wonder in its form. Do try this twist. Crisp from outside and soft from within. You will want to make extra upma every time only to relish these vadas.

Ingredients Serving: 8

  1. Leftover upma 3 cups
  2. Red chilli powder 1 1/2 tsps
  3. Dhania jeera powder 1 tsp
  4. Cornflour 3 tbsps
  5. Rice flour 3 tbsp
  6. Baking soda 1/4 tsp
  7. Salt to taste
  8. Few Curry leaves

Instructions

  1. Crumble the upma first
  2. Add the flours and spices and mix well by hand
  3. Add the curry leaves and mix
  4. Now lastly add the baking soda. Mix well and leave aside covered for 10 minutes.
  5. Heat oil for deep frying. Keep a small bowl of water ready to wet your fingers.
  6. Test the oil with a Pinch of ball. If it rises up then ready to fry.
  7. Pinch a lemon sized ball and make a round
  8. Flatten and make a hole with your wet thumb
  9. Now slip slowly in the hot oil
  10. Make few more and slip into the oil
  11. As the sizzle slows remove on a tissue
  12. Serve hot with your favourite sauce
