In a bowl, mix maida, salt, ajwain, and 1 tbsp oil. Add water and knead it into a dough.
Keep the dough aside covered with a moist cloth for 15 mins.
In a pan, heat oil , add cumin seeds, ginger and all the spices. Cook for a few seconds.
Add mashed potatoes and peas and cook for another 5 mins.
Remove the mixture from heat and allow it to cool down.
Make small spheres from dough. Roll them into small circles.
Cut the circles into two semi circles. Brush water on the edges of semi circle.
Join the edges to make a hollow cone.
Stuff the mixture in the cone and seal it.Shape and fill all the samosas this way.
Heat oil in the frying pan, and fry the samosas till golden brown.
Serve hot with chutney.

Yes Nupur, you can brush with oil and bake it.
Same problem with me also it becomes sift after aa hour
instead of frying can we bake it?
For crispness u need to rub maida after putting oil to bring crumble like texture. You can try this with puri also u will see it remain crisp.
I'd like to ask why is that the samosas available in the market are always crispy and mine goes soggy after 1/2 hour?
I load my dishes with more excitement than you will find in other new recipes that are getting far more attentions.
