ABOUT Homemade Butter/Makkhan...(White Butter with Whipping Cream) RECIPE

Easy and done in just a matter of 10 minutes at home, this one is done using whipped cream. Though traditionally all over India, this is done using malai collected over a few days at a stretch and then in village, people uses a matki in which it is churned clockwise and anti clockwise directions until makhan is obtained. It is made by collecting malai from the milk used everyday at home. It is followed even to date and it inevitably is a must have one for many of us. This butter is then used for making many a mouthwatering dishes and who can forget the classic makki ki roti with white butter and sarson ka saag. It is aptly desctibed as a 3 ingredient magic. Ingredients Serving: 10

  1. Heavy Whipping cream 2 cups
  2. Ice cubes 1/2 cup
  3. Water 1/2 cup

Instructions

  1. Use a hand held blender or a stand mixer for this.
  2. Blend on high for about 2 to 3 minutes.
  3. Keep blending on high for a further 2 to 3 minutes adding ice cubes and water until you see lumps of fat and the liquid.
  4. These lumps (fats) seen is the butter.
  5. Keep blending for 3 minutes more.
  6. The liquid is the whey which can be used for baking cakes.
  7. Take the butter out with a slotted spoon.
  8. Squeeze it hard to drain out any excess buttermilk traces remaining.
  9. Rinse it with drinking water to remove any traces of the buttermilk.
  10. Shape it and store in an airtight container in the refrigerator.
  11. You can add some salt and store if desired.
  12. You can even add some mince garlic to it for garlic butter.
  13. This recipe makes 1 cup of white butter.
