ABOUT Ponk and jawar ke parathe RECIPE

This is a recipe pf a traditional breakfast of Rajasthan, a very filling and very delicious recipe for everyday.

Ingredients Serving: 4

  1. 1 cup green ponk
  2. 1/2 cup Boil peas
  3. 3 garlic crush
  4. 1/2 tsp Grated Ginger
  5. 1 tsp black pepper powder
  6. 1 tsp chat masala
  7. Few leaves cilantro
  8. oil
  9. For dough
  10. 1& 1/2 cup jawar atta
  11. 1&1/2 cup wheat flour ( gehu ka atta)
  12. Salt to taste
  13. 2 tbsp oil ( mon ke liye)
  14. Water as required

Instructions

  1. For stuffing: Soak the ponk in hot water for 10-15 minutes so that the mud and other things are removed.
  2. Drain the ponk and wash it with normal water. Half crush the peas.
  3. Heat oil in pan add crushed garlic and crushed ginger and saute for few minutes.
  4. Now add ponk and crushed peas. After adding it add all the spices like black pepper, salt, chat masala and celantro and mix well and cook for a minute or two.
  5. Cool it completely.
  6. For dough: Mix jowar and wheat flour. Add salt, oil and make a soft dough with water and let it rest for few minutes.
  7. Making of paratha:
  8. Make same size 2 medium sized balls and roll them.
  9. Now add 2-3 tablespoon of stuffing in one paratha and cover the stuffing with other paratha.
  10. Press the edges well and roast on tava with oil or ghee till it is golden brown.
  11. This paratha will be a bit crispy.
  12. Serve the paratha with raita and pickle.
