ABOUT Kadahi Kheema... RECIPE

A lipsmacking one for a scrumptious breakfast. It is not only a treat to the tastebuds but also to the eyes. Made in a wok or a kadahi, it is a stir fried mince preparation that goes well with parathas and chapatis. It is therefore a favourite one of my family and we often have it with whole wheat pooris too.

Ingredients Serving: 6

  1. Lamb mince 500 gm
  2. Ginger garlic paste 1 tbsp
  3. Salt 1 tbsp
  4. Turmeric 1/2 tsp
  5. Red chilli powder 1 tbsp
  6. Cumin powder 1 tsp
  7. Green chillies chopped 1-2
  8. Garam masala 1 tsp
  9. Cubeb powder 1/4th tsp
  10. Coriander leaves finely chopped 1/4th cup
  11. Oil 3-4 tbsp

Instructions

  1. Wash and rinse the lamb mince.
  2. Allow the water to drain completely.
  3. In a wok or kadahi, heat oil and saute ginger garlic paste on a low flame for a few seconds.
  4. Now add the rest of the spices including the salt.
  5. Saute them for half a minute.
  6. Now add the lamb mince.
  7. Saute it on a high heat for a minute or two.
  8. Cover and simmer for the next 15 minutes.
  9. Do not add any water.
  10. It will be cooked in it's own juices
  11. Now increase the heat and saute it on a high heat for about 10 more minutes until it smells heavenly.
  12. Sprinkle garam masala and cubeb powder both.
  13. Garnish with chipped coriander.
  14. Mix well and serve hot with rotis, chapatis, parathas and pooris.
