Ingredients Serving: 6

  1. 1 cup Suji
  2. 3/4 cup curd
  3. 1 medium beetroot
  4. 1/2 inch ginget
  5. 2 green chilli
  6. salt as per taste
  7. 1 sachet eno
  8. Tempering----
  9. 2 tbsp Oil
  10. 1 tbsp mustard seeds
  11. 1 tsp chana daal
  12. 10 curry leaves
  13. 6-7 broken cashews
  14. 2 dry red chilli broken in pieces

Instructions

  1. Chop beetroot and make fine paste in mixi by adding water
  2. Take Suji in a bowl
  3. Add curd and beet paste
  4. Add salt
  5. Now made tempering--
  6. Heat oil add mustard seeds
  7. Take chana and add in it
  8. Roast and add cashews
  9. Roast them also
  10. And add curry leaves and red chilli
  11. Now keep 2 tsp tempering safe for garnishing
  12. And add rest in batter and mix
  13. Now take eno sachet and mix in it
  14. Pour mixture in cupcake moulds
  15. And steam them in steamer
  16. Take coconut chutney in piping bag
  17. And pipe on cupcakes
  18. Add remaining tempering on it and serve hot
