Who says you cannot enjoy baked goodies guilt-free !!! These Savoury Pearl Millet and Carrot Muffins are great tea-time snack that you can enjoy guilt-free. The recipes uses only 2 tablespoons oil and I have used olive oil to make it healthier. Pearl millet or bajra is rich in essential compounds like protein, fibre, phosphorous, magnesium and iron, minerals and amino acids. Olive oil is rich in omega 3 and 6 fatty acids and it contains huge amounts of antioxidants.

Ingredients Serving: 4

  1. ½ cup pearl millet flour/bajra flour
  2. ½ teaspoon baking powder
  3. ¼ teaspoon baking soda
  4. ¼ teaspoon salt
  5. 1/3 cup curd
  6. 2 tablespoons olive oil
  7. ¼ teaspoon pepper powder
  8. 1/3 cup grated carrots
  9. ¼ cup water

Instructions

  1. Preheat the oven to 180 degrees Celsius for 15 minutes.
  2. In a wide bowl, sift pearl millet flour, baking powder, baking soda and salt. Keep aside.
  3. In another bowl, combine curd and olive oil. Beat well with a whisk.
  4. Add water and mix.
  5. Add the flour mixture gradually and gently stir until everything gets mixed well.
  6. Now add grated carrots and pepper powder. Mix gently.
  7. Line a muffin tray with paper cups and pour the batter in them.
  8. Bake at 180 degrees Celsius for about 35-40 minutes. First set the time for 30 minutes. Be alert and check after 30 minutes. Then bake for a few more minutes. Baking time will vary for every Convection.
  9. Serve and enjoy these yummy Pearl Millet Muffins.
