Ingredients Serving: 4

  1. For makai tarts:
  2. Makai flour 150 gms
  3. Whole wheat flour or Maida 50 gms
  4. Butter cold 50 gms
  5. Cold water to knead dough
  6. Salt 1/2 tsp
  7. For saag mixture:
  8. Spinach chopped and blanched
  9. Bathua leaves chopped and blanched
  10. Sarso leaves chopped and blanched
  11. Each around 1 cup
  12. Garlic chopped
  13. Green chilly chopped
  14. Mustard oil for temper
  15. Salt
  16. Haldi powder
  17. Red chilly
  18. White sauce 2 tbsp
  19. Cheese grated for garlic optional

Instructions

  1. To prepare makai dough, add cold butter to makai,maida and salt mixture and mix with fingers till it looks like bread crumbs.
  2. Add little water at a time and knead tight dough.
  3. Cling wrap and keep in fridge for ten minutes.
  4. Meanwhile blanch all leaves and strain water
  5. Temper mustard oil with garlic and chilly.
  6. Add all blanched leaves and spices. You can add flavours acc to taste
  7. Add white sauce to add creaminess to saag
  8. Take out dough from fridge and roll out
  9. Press into tart moulds with fingers. It should be not too thin, not too thick.
  10. Prick with fork
  11. Preheat oven to 200 deg.
  12. Bake tarts at 200 deg For 15 to 20 minutes
  13. Take out and cool them. Fill with saag Mix and top with grated cheese.
