ABOUT Creamy Italian Lemon Flavoured Gelato RECIPE

This is Gelato, Italian Gelato. Lemon Flavoured. Have tried Gelato before from the Gelato Parlours. But never came across this delightful refreshing lemon flavour. The thought of the refreshing flavour of lemon made me drool and try this awesome dessert at home. Simple to make and believe me even simpler to finish it off.

Ingredients Serving: 6

  1. Milk 1 cup
  2. Sugar 1 cup
  3. Egg Yolks 5
  4. Whipping Cream 2 cups
  5. Lemon Juice 1/2 cup
  6. Lemon Zest 1 tbsp

Instructions

  1. Take a small heavy base saucepan. Add milk and put it on high flame till it is just about to boil.
  2. Just before the milk starts to boil reduce flame and add the sugar stirring so that the sugar gets dissolved.
  3. Take egg yolks in a bowl and slightly whisk it. Now add 3 tbsp of the hot milk sugar mixture to the yolks and whisk it constantly. Mix well so that the egg mixture does not curdle.
  4. Now add this egg mixture and lemon zest to the remaining milk mixture. Cook it on low flame till the mixture is smooth and evenly coats a metal spoon. Do not allow to boil. Remember to stir the mixture continuously during the process.
  5. As soon as it coats the metal spoon remove from heat and add lemon juice. Mix well.
  6. Strain the mixture through a sieve into an air tight container (in which you want to refrigerate), place this bowl in a pan of ice water.
  7. Stir gently and occasionally for 2 to 3 minutes.
  8. Stir in the cream. Now press cling film onto the surface of the gelato making sure there is no air space in between the gelato and the film. Close the lid and refrigerate.
  9. Take the mixture out every 2 hours and churn it with an electric hand mixer. Refrigerate again.
  10. Do this 3-4 times or until there are no water crystals left in the gelato. Remember to refrigerate every time with the cling film.
