ABOUT Gluten Free Yellow Corn Flour Khaman Dhokla RECIPE

This is recipe is a healthy version of Gujarati snack prepared using Gluten free yellow corn flour. Yellow corn flour is nothing but maize flour and it is called as Makacholam in Tamil and Makki in hindi. Gluten free yellow corn flour is easily available in most of the super markets. This can be served as snack or breakfast too along with Mint - Curd chutney.

Ingredients Serving: 3

  1. 2 Cups Gluten free Yellow Corn flour / Makkacholam flour
  2. 1 Tbsp Bansi Rava
  3. A pinch of Turmeric powder
  4. 1/2 Cup Curd
  5. Salt to taste
  6. 2 Tsp Sugar
  7. 2 Tbsp Olive oil
  8. 1 Eno Packet ( 4.5 gms )
  9. 1/2 to 3/4 Cup Water
  10. For Seasoning :
  11. 2 Tsp Olive oil
  12. 1 Tsp Mustard seeds
  13. 2 Green chillies, Finely chopped
  14. Handful of Curry leaves
  15. 1/2 Cup of Water
  16. A pinch of salt
  17. 1 Tsp Sugar ( I have used Demerara sugar )
  18. 1 Tsp Lemon juice

Instructions

  1. Mix Yellow corn flour along with Bansi rava,Turmeric powder, Curd, Salt, Sugar and Olive oil in a large pan.
  2. Add water little by little, mix well and prepare batter without any lumps.
  3. The consistency batter should not be too thick or too thin.
  4. Grease a wide pan with oil and keep aside.
  5. Add eno to the corn flour batter and mix well. ( Mix eno only at the time you are going to steam ).
  6. Pour the batter to the greased pan and steam it for 25 - 30 mins in a medium flame or till the skewer comes clean.
  7. Once done, remove from the flame, cool it for 5 to 10 minutes and then invert to a plate. Once done, remove from the flame, cool it for 5 to 10 minutes and then invert to a plate.
  8. For Seasoning, heat oil in a pan and add mustard seeds.
  9. Once it starts spluttering, add finely chopped green chillies followed by curry leaves, water, salt and sugar.
  10. Add the lemon juice and let it boil.
  11. Pour seasoning water on the dhoklas and serve.
