ABOUT Date and Walnut Cake RECIPE

Meet the younger sibling of the Christmas cake- a “Date and Walnut cake”. Like the mighty Christmas cake, this cake too has a rich texture and taste. After a few permutations and combinations, this is my best “formula” for the cake. Actually , I have been wanting to post this recipe for a very long time. And the small party that we had at our place last Saturday presented me with the opportunity. I happily baked this cake, got the hubby to take the pictures, and then sat on them for two days !! Finally got around to write the recipe today. So, here’s the cake and the recipe for you. Bake it and eat it with vanilla ice-cream, the way it is served at our home. This cake is a big hit with the kiddos as well as the grown ups. People always ask for a second helping and I see them absolutely relishing it. So go ahead, take that baking dish out and fill your home with the wonderful aroma of dates & walnuts. Happy Baking friends !!

Ingredients Serving: 10

  1. 250 gm dates ( khajur ), deseeded and chopped finely
  2. 1/2 tsp vanilla essence
  3. 1/2 tsp baking powder
  4. 1/2 tsp baking soda
  5. 1 cup plain flour ( maida ) + 1 tbsp extra to coat the dates and walnuts
  6. 3 eggs
  7. 3/4 cups sugar, powdered
  8. 1/2 cup oil
  9. 200 gm walnuts, chopped finely
  10. 1/2 tsp cinnamon powder

Instructions

  1. Preheat the oven to 160 degree centigrade.
  2. Soak the dates in 6 tbsp of water with 1/2 tsp of baking soda for 4-5 hrs ( preferably ).
  3. Sieve the flour with the baking powder 5-6 times and keep aside. Also mix the dates and walnuts with the extra 1 tbsp flour. Keep aside.
  4. Beat the egg yolks and the egg whites in separate bowls. Also beat the oil and sugar separately. Add in the beaten egg yolks and mix.
  5. Next, add the flour and mix again. Now add the vanilla essence and the cinnamon powder.
  6. Tip in the beaten egg whites and fold into the mixture with a spatula or a fork until no streaks remain. Lastly add the dates and walnut and mix in gently with a fork.
  7. Pour this batter into an oiled and dusted baking dish.
  8. Bake in the preheated oven for 90 minutes.
  9. Once cooked, let it cool and cut in slices to serve.

Same settings for microwave...???

use 3 teaspoon flax seed powder soaked in 6 tablespoon water instead of egg. let it soak for 5 min. you may add milk if required at the end to get better dough consistency
