  • Vegetables to cut :
  • potato -1
  • carrot -2
  • Beans -12
  • Raw banana -1
  • Brinjal -6
  • Broad beans -8
  • Tender field beans - a handful
  • Greens - a handful
  • Other Ingredients:
  • rice -1 cup
  • Toor dal -1/2 cup
  • tamarind - 1 lemon size
  • water -5 cups
  • salt -as needed
  • masala paste :
  • Small onion -10
  • garlic -3
  • Red chillies -7
  • Grated coconut -1/4 cup
  • Temper :
  • Gingellly oil -2 table spoon
  • mustard seeds -1 tea spoon
  • Urad dal -1 teaspoon
  • curry leaves - little

How to make Kootanchoru / mixed vegetables and lentil rice

  1. Cut all the veggies and greens
  2. In a cooker cook rice and toor dal with given quantity of water until soft and mashy.
  3. Now grind the ingredients given under grinding with little water into fine paste
  4. In a kadai add gingerlly oil and temper the given ingredients and add the vegetables .Saute for a minute or two and add tamarind extract and salt to it and boil .
  5. When vegetables are cooked add the grounded masala paste to it and boil for few more minutes.
  6. Then add the cooked rice and dhal mixture and stir it for sometime so that all the ingredients blend well .
  7. Serve hot with papads.

My Tip:

We can add vegetables of our choice .
