Achari Pumpkin

Ingredients to make Achari Pumpkin

  • 250 grams pumpkin
  • 1/2 tea spoon fenugreek/ sauf powder
  • 1/4 tea spoon black mustard
  • 1/4 cumin seeds
  • 1/4 tea spoon red chilli powder
  • 1/4 tea spoon coriander powder
  • 1.5 tea spoon fennel powder
  • 1/4 tea spoon Garam masala
  • salt as per taste
  • 1 table spoon of cooking oil
  • 1/4 cup water
  • Green coriander for garnish

How to make Achari Pumpkin

  1. Firstly peel the pumpkin and chopped into pieces
  2. Take a frying pan add oil wait till it hot
  3. Add fenugreek seeds , mustard seeds and cumin seeds saute till it crackling
  4. Add grated ginger saute for a minute
  5. Add haldi and jeera powder saute for minute
  6. Add pumpkin and mix well
  7. Add red chilli powder, coriander powder, salt mix well cook for 2 minutes
  8. Now add the fennel or said powder mix well
  9. Add water stir it well
  10. Cook pumpkin for 5 minutes on low flame by covering the lid
  11. Check the pumpkin give a stir
  12. Add the garam masala
  13. Cook for another 5 minutes low flame till pumpkin becomes soft and tender by covering the lid
  14. Lastly garnish with green coriander
