Methi Chicken

Ingredients to make Methi Chicken

  • 1 kg chicken, cleaned, washed, and drained
  • 2-3 big bunches of methi(fenugreek leaves) cleaned, chopped, washed and drained
  • 1 bunch dhania(coriander leaves)
  • 3 large onions, sliced
  • 2 large chopped tomatoes
  • 2 tbsp ginger and garlic paste
  • 1 tsp green chillies grounded
  • 6-7 cloves
  • 4-5 green cardamom
  • 2" cinnamon stick
  • 1 tsp turmeric powder
  • 2 tsp coriander powder
  • 2 tsp red chilli powder
  • salt to taste
  • 1/3 cup oil

How to make Methi Chicken

  1. Heat oil in a thick bottom/nonstick pan.
  2. Splatter cumin seeds.
  3. Add whole spices.
  4. Add chopped onions and fry them on medium flame, till light golden brown.
  5. Add ginger garlic paste.
  6. Add ginger garlic paste.
  7. Add chicken pieces, turn the flame to high and mix them well.
  8. Add salt.
  9. When chicken starts getting brown, sprinkle turmeric, dhania powder and chilli powder.
  10. Add green chillies and tomatoes.
  11. Leave it for a couple of minutes Tomatoes will release water.
  12. Now mix all well.
  13. Let the chicken cook on high flame, stirring often. Add little water and lower the flame
  14. Boil methi leaves for 5 minutes in another pan.
  15. Now add methi and dhania in chicken, keeping the flame high.
  16. Mix everything well, but gently. Turn the gas to medium sim
  17. Cook uncovered (very important, to retain the green colour) for 6-8 minutes.
  18. The water/juices from methi and dhania will dry up, oil will again separate.
  19. The chicken will be cooked by this time, and the greens will coat the pieces.
  20. Serve hot with Roti or rice.
