Ingredients to make Utterly butterly cuppy cakes

  • For Cake
  • egg - 2
  • Unsalted butter - 100 grams
  • flour - 100 Grams
  • Powdered sugar - 100 grams
  • Baking powder- 1/4 teaspoon
  • Vanilla essence - 1/2 teaspoon
  • salt a pinch
  • For Frosting
  • egg white - 60 milli litres
  • sugar - 125 grams
  • Unsalted butter - 140 grams
  • Vanilla essence- 1/2 teaspoon
  • Food color essence
  • Gems and chocolate chips for decorating

How to make Utterly butterly cuppy cakes

  1. For cake Preheat oven to 180°C/160°C fan-forced
  2. Using an electric beater, cream butter, caster sugar and vanilla in a medium bowl on medium-high speed until light and fluffy.
  3. Add eggs, 1 at a time, beating to combine. 
  4. Mix flour with baking powder and add into egg mixture and stir well
  5. Divide evenly among paper cups and bake for 15 minutes
  6. For froasting double boil the egg white and sugar with medium flame
  7. Beat on high speed until the mixture has cooled to room temperature.
  8. Cut butter into large pieces (cubes)
  9. When the mixture and the bowl no longer feel warm, start adding the butter one cube at a time, mixing well in-between each addition
  10. Add the vanilla and continue to beat until the cream is smooth and slightly stiff.
  11. Decorate cup cakes with butter cream icing and gems

My Tip:

In frosting you can add other flavorings besides vanilla
