MUDKALE (RICE DUMPLINGS IN PRAWN AND COCONUT MILK MASALA )

Ingredients to make MUDKALE (RICE DUMPLINGS IN PRAWN AND COCONUT MILK MASALA )

  • A)FOR rice DUMPLINGS
  • Parboiled rice -3 cups
  • Sona masoori rice -3/4 cups
  • salt to taste
  • B)FOR coconut MILK MASALA
  • 2 Fresh coconut grated
  • Fennel seeds -1tsp
  • cumin seeds -1 tsp
  • Green chilies -4to 5
  • turmeric -1tsp
  • C)FOR PRAWN masala
  • Prawns -1kg
  • onion -8 medium
  • Few curry leaves
  • Green chilies -16
  • ginger garlic paste -2-3 tbsp
  • turmeric powder -1/2 tsp
  • coriander powder -1 tbsp
  • cumin powder -1tsp
  • Black pepper powder -1 tsp
  • salt to taste
  • oil 3-4 tbsp
  • coriander leaves handful
  • FOR PREPARING MUDKALE
  • oil 3 tbsp
  • curry leaves handful
  • coriander leaves handful
  • salt to taste

How to make MUDKALE (RICE DUMPLINGS IN PRAWN AND COCONUT MILK MASALA )

  1. A)FOR RICE DUMPLINGS :- Mix all the ingredients mentioned Above & grind by adding a little water. The dough should be fine & dry . After grinding transfer the entire dough into a large bowl.
  2. Take a tiny ball size of dough & roll it in between the palms of your hand & press lightly & arrange in a plates
  3. B) FOR COCONUT MILK MASALA :- Take all the ingredients in a blender jar , add 1/2 or 1 cup water & blend on high till the mixture is ground well. Strain in a muslin cloth & collect the first extract in a bowl
  4. Then collect & put back coconut residue into the blender, add 1 cup water &blend again, strain & collect this coconut milk in another bowl (second extract )
  5. C)FOR PRAWNS MASALA :- Heat oil in a pan add curry leaves fry for a minute
  6. Add the chopped onions & green chilies & saute till light golden brown
  7. Add ginger garlic paste & fry till oil seperates Add all dry spices powder
  8. Saute for a minute & cook till oil separates
  9. Add the prawns & mix well
  10. Adjust the salt ,pour 1/2 to 1 cup of water cover and cook till it is done, garnished with chopped coriander leaves
  11. TO PREPARE MUDKALE Heat a heavy bottom large vessel , pour some oil & add curry leaves
  12. Pour 2nd coconut milk extract & allow it to boil , then add 1st coconut milk extract & allow it to boil for few min on low flame.
  13. Add prawns masala & allow it to cook for few minutes on low flame stirring continously.
  14. Taste masala & adjust the salt. Very carefully add a plate of rice dumplings in the masala.
  15. Don't stir just allow it to cook till masala starts boiling
  16. Then stir slowly & carefully, so that the tiny rice ball s don't rest at the bottom.
  17. Then again add a 2nd plate slowly, allow it to cook till masala starts boiling & again stir slowly, keep the flame on medium, then repeat the procedure till you are done with all the rice dumpling plates.
  18. Cook rice dumplings till it is completely done by stirring slowly.
  19. Keeping checking the consistency of masala in between .
  20. If its too thick then boil some water in a separate pan & add it into masala till you get the correct consistency
  21. Add coriander leves & switch off the flame & transfer it into dishes
