ABOUT Malabar Banana Lakkottappam RECIPE

Lakkottappam is a special Malabar snack that can be stuffed with a sweet banana and coconut filling. It can be served as a festive snack and it is a good starter recipe too. They are normally prepared during Eid or Iftars.

Ingredients Serving: 5

  1. For filling :- Ripe banana - 2 nos
  2. Grated coconut - 1 cup ( 200 gm )
  3. Sugar - 4 tbsp
  4. Cashew nuts - 10 nos
  5. Raisins - 10 nos
  6. Ghee - 2 tbsp
  7. Cardamom powder - A pinch
  8. For pancake :- All purpose flour ( maida ) - 1 cup ( 200 gm )
  9. Egg - 1 no
  10. Turmeric Powder - 1/4 Tsp
  11. Water - 1 cup ( 150 ml )
  12. Salt to taste
  13. sugar syrup: sugar 1/2 cup
  14. water 1/4 cup
  15. green cardamom pods 2-3 nos.
  16. 1/2 teaspoon lemon juice

Instructions

  1. Using a steamer, cook the bananas for 5 minutes on a medium flame
  2. Take out the banana and let it cool. Remove the black seeds inside the banana
  3. Then mash it with a fork or a spoon.
  4. Heat ghee in a pan and fry cashew nuts and raisins on a low flame
  5. Add grated coconut, sugar and cardamom powder into it and cook for 3 minutes on a low flame
  6. Add cooked and mashed banana into it and mix well. The filling is ready. let cool
  7. To prepare batter, mix flour, egg, turmeric powder and salt in a bowl.
  8. Add water slowly and mix well with a beater or spoon until no lumps are found. The consistency should be of crepe batter
  9. Heat a non stick frying pan and pour a spoonful of batter in the centre, spread with the back of the spoon to a thin round.
  10. Keep on medium flame and cook for 3 minutes. Remove the pancake from the pan.
  11. Place 2 tbsp of banana coconut filling on the center of the dough.
  12. Fold both the sides and the ends, use little water to glue them. It will be like square shaped box
  13. for sugar syrup: combine all the ingredients mentioned under sugar syrup and oil on Low heat for 2-3 minutes
  14. discard the cardamom pods
  15. pour 1 tablespoon full of sugar syrup on the folded lakkottappams each
  16. serve lakkottappam as a dessert or a evening snack!
