ABOUT Malvani Mutton Masala RECIPE

Mutton cooked in a coconut based authentic malvani gravy.

Ingredients Serving: 4

  1. 1 kg mutton
  2. 1/2 cup grated coconut
  3. 2 big sized onions
  4. 15 cloves of garlic + 2 inch piece ginger+10 green chillies+ handful of coriander = to make a paste
  5. 2 tablespoon curd
  6. Turmeric 1 tsp
  7. Salt to taste
  8. Malvani masala - 4 tsp
  9. Garam masala - 2 tsp
  10. Ghee 1 tbsp
  11. 1 potato

Instructions

  1. Mix the mutton with 2 big spoons of curd, salt and turmeric. Keep it aside to marinate.
  2. To make the paste, grind the ginger, 15 cloves garlic, 10 green chillies and coriander together. Then mix this paste with the mutton marination.
  3. Heat oil in a cooker, put in a bay leaf and let it crackle, then put in the whole marinade (with the paste), add the potato (cut in two) along with 2 cups of water. Let it cook till 4 whistles blow.
  4. Meanwhile, in a separate pan, fry the 2 big sliced onions, 5 garlic cloves and 1/2 cup of coconut (let it roast nicely). Let it cool down then mix and grind this to a fine paste in the mixer.
  5. Now add this brown paste into the cooked mutton in the cooker, then add the malvani masala, garam masala and 1 spoon of ghee. Let it simmer for 10 minutes. Add lemon if needed.
  6. Serve it warm for best taste.
