About Bindi stew. Recipe

A side dish for rice or apam.

Bindi stew.

Ingredients to make Bindi stew.

  • Bindi cut into small pieces 10
  • onion 1 small sliced.
  • shallots sliced 10
  • green chillies 3 cut lengthwise
  • ginger a small piece chopped
  • garlic 3 4 clove chopped.
  • coconut milk 2 cups
  • curry leaves a few
  • coconut oil 2 tbsp

How to make Bindi stew.

  1. Heat a pan with oil. Add chopped ginger & garlic. Fry.
  2. Then add shallots , chillies,& curry leaves. Fry well for a few seconds.
  3. Then add bindi & onion. . Fry & cook till bindi is cooked , adding salt. Stir occasionally.
  4. When everything is well mixed , add coconut milk. Let it boiled for a few minutes or the gravy s a bit thick. Gravy should be usual stew consistency.
  5. Add some more curry leaves & remove from heat.
  6. Serve hot.

My Tip:

Avoid garlic if u dont want.Make this curry just 30 min, before serving, bindi has a tendency to make gravy thick.
