ABOUT Valache Bhirde or Broad Beans Curry RECIPE

Broad beans are also known as fava bean, faba bean, field bean, bell bean, or tic bean. In Maharashtra, it is popularly called as Val or kadve Val or Dalimbi, or Pavta. They are starchy and has a delicate flavor. They are also known as Mochai(Tamil), Patani (Thai), arapayar (Malayalam). Broad beans are used in many food preparations. Soups, curries, Pulao etc.

Ingredients Serving: 6

  1. Broad Beans or Pavta or Val or Fava beans– 1 ¼ cup (Soaked overnight or sprouted)
  2. Salt to taste
  3. Warm water – 2 – 3 cups
  4. Tamarind paste – ¼ - ½ tsp or kokum pieces - 2
  5. Sugar a small pinch
  6. For tempering - Cumin seeds – ½ tsp
  7. Mustard seeds – ½ tsp
  8. Onion finely chopped – 1 medium
  9. Asafoetida – ½ tsp
  10. Turmeric powder – ½ tsp
  11. Red chilli powder – 1 tsp
  12. Garam masala or goda masala – 1 tsp
  13. Coriander powder – ½ tsp
  14. Cumin Powder – ½ tsp
  15. Tomato finely chopped – 1 medium
  16. Oil – ½ tbsp

Instructions

  1. Soak broad Beans or val or pavta in water overnight or use sprouted which is easily available in market. Or do it at home. soak broad beans and drain the Water. Hang soaked beans in a moist cloth for 10-12 hours or till you see the sprouts
  2. Blend coconut, ginger, garlic, coriander leaves into a fine paste. Keep aside.
  3. Heat oil in a pan.
  4. Add mustard and cumin seeds. Let it splutter.
  5. Add finely chopped onion. Cook till translucent
  6. Add asafoetida, Turmeric, garam masala or goda masala, red chili powder, coriander and cumin powder, salt, sugar. Mix and cook for 12-15 seconds.
  7. Add finely chopped tomatoes. Cook till it softens.
  8. Add prepared paste once tomatoes cooked properly. Sauté for 2-3 minutes.
  9. Add warm water. Stir it. Add broad beans or val. Gently mix.
  10. Close and cook or 8-10 minutes on low medium flame or until beans soften. Don’t overcook.
  11. Add tamarind paste. Stir gently.
  12. Adjust the consistency. Turn the gas off.
  13. Serve hot with chapati or steamed rice.
