Kachori is a very famous snack item everywhere , normally it is made by all purpose flour , here i made potato stuffed kachori with rawa/ suji ,

Aaloo suji kachori

Ingredients to make Aaloo suji kachori

  • 1.5 cup suji / rawa [semolina]
  • 3 cup water
  • 1/2 tsp salt
  • oil for frying
  • For stuffing:-
  • 4 boiled and mashed potatos
  • 2 green chillies chopped
  • 1 medium onion chopped
  • 1 tbsp oil
  • 1/2 tsp cumin
  • 1/4 tsp hing/ asafoetida
  • 1 tsp red chilly powder
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp dry mango powder
  • salt to taste

How to make Aaloo suji kachori

  1. Heat oil in a wok , add cumin to splutter , add green chilly and onion till translucent
  2. Add boiled potatoes and all the dry spices and mix well , add corriender and let it cool
  3. Meantime make suji dough by aading water into a wok and boil with salt
  4. As it comes to a boil add rawa with one hand by stirring continuesly with another hand, to avoid lumps
  5. Cook for 2-3 minutes till mixture bind together , then let it cool slightly
  6. Collect together and make a dough
  7. Now take a lemon size ball and fkatten with greased hands , stuff with potato mixture and cover properly
  8. Seal the edges and make all the kachories
  9. Fry till golden brown on low medium heat
  10. Serve hot with fried green chillies

My Tip:

Fry on medium low heat , and water should be just doubled by to make a dough
