ABOUT Colocasia Roast RECIPE

Colocasia has a very significant amount of dietary fiber and carbohydrates, as well as high levels of vitamin A, C, E, vitamin B6, and folate. There is magnesium, iron, zinc, phosphorous, potassium, manganese, and copper in it.

Ingredients Serving: 4

  1. Colocasia 1/2 kg
  2. Water for boiling 3 large glasses
  3. Turmeric powder 1/2 teaspoon
  4. Sesame oil 3 tablespoons
  5. Red chilli powder 1 .5 tablespoons
  6. Coriander powder 1 teaspoon
  7. Salt 1.5 teaspoons
  8. Hing 1/4 teaspoon
  9. Curry leaves ( optional ) for flavour .

Instructions

  1. Clean the Colocasias thoroughly under running water . Repeat the process for five times as it carries a lot of mud and sand along with it .
  2. Now take a large container , add 3 to 4 large glasses of water , add the cleaned colocasias and let it boil for about 12 minutes . Use a fork and check whether the vegetable is cooked or not . Don’t cook it too soft / mushy . Par boiled state will do .
  3. Now transfer these boiled colocasias to a bowl containing normal water . This step eases in removing the skin of the Colocasias .
  4. Start removing the skin of the Colocasias and place the whiter part of the Colocasias in a dry plate . Make sure the inner part doesn’t come in contact with even a drop of water . The more drier , the more crispier the roast would result .
  5. Heat 3 tablespoons sesame oil in a wide pan . Add turmeric powder , chilli powder , coriander powder , salt , hing to the oil and mix well along with the oil . Maintain a low flame so that this masala wouldn’t turn dark and burnt . Add the curry leaves ( 7) .
  6. Now add the cleaned , drained colocasias ( white part ) and keep tossing it for few seconds until the masala gets coated completely over the colocasias . Now let it roast slowly under low flame for 10 to 15 minutes . Keep tossing in between so that the sides cook , gets roasted evenly .
  7. Roast till the colocasias become golden brown , until you get an aroma .
  8. Serve hot .
