Vazudenega means brinjal in malayalam. Brinjal thoran is a dry side dish which is not only tasty but also very simple and easy to prepare with minimal ingredients

Vazudenega thoran(Green Brinjal stir fry with grated coconut)

Ingredients to make Vazudenega thoran(Green Brinjal stir fry with grated coconut)

  • Green Brinjal- 300 gms cut in to 1
  • onion- 1 cut length wise
  • green chilly- 1
  • garlic- 7-8
  • mustard seeds-1 tsp
  • turmeric Powder- 1 tsp
  • chilly powder- 1 tsp(Optional)
  • coconut oil- 1 tbsp
  • salt as per your taste
  • Grated coconut
  • curry leaves- a sprigs

How to make Vazudenega thoran(Green Brinjal stir fry with grated coconut)

  1. Heat oil add mustard seeds, allow it to splutter then add green chilly , curry leaves , onion and garlic slice and fry for 3-4 mins later add brinjal and fry until brinjal turns soft.
  2. Add salt, turmeric powder and stir well until all masala incorporated with baingan.
  3. Now check if baingan in cooked properly if so, now its time to add grated coconut mix well and cook for another 2 mins.
