    Brinjal coconut fry

    Ingredients to make Brinjal coconut fry

    • 250 gms brinjal, preferably green
    • 2 tsp sambar powder
    • 2 tbsp coconut fresh grated
    • 1/4 cup coriander leaves, cut
    • 1/4 tsp turmeric powder
    • 2 tbsp oil (I used ground nut oil)
    • 1 tsp lime juice or amchur powder
    • 1 tsp asfoetida
    • 1 tsp mustard seeds
    • 1/ tsp udad dal

    How to make Brinjal coconut fry

    1. Cut the brinjal in long strips and soak it in water.
    2. Grind the sesame seeds, sambar powder and coconut in the mixer till it get gets mixed well.
    3. Take a kadai, heat oil then add the mustard seeds, udad dal, asfoetida and fry the curry leaves.
    4. Then add the brinjal, turmeric powder, salt and let it dry. Keep the lid closed and sprinkle water, then leave it for 3 mins.
    5. Add the masala, coriander leaves and fry it for a few minutes.
    6. Serve it hot with roti or chawal.

    My Tip:

    Any green brinjal will do to prepare this dish. It goes well with sambar chawal as well.
