Ingredients to make Crispy Brinjal fry

  • 8 long brinjal
  • 1 big onion
  • 2 green chilly
  • 1 cup besan
  • 2 tsp Corn flour
  • 1/2 tsp red chilly powder
  • 1/2 chaat masala
  • 1/2 tsp coriander powder
  • 1/8 tsp carom seeds
  • 1/8 tsp dry mango powder
  • 2 pinch baking powder
  • oil for frying

How to make Crispy Brinjal fry

  1. clean and was brinjal very well and cut and separate head
  2. cut onion and green chili finely and keep aside
  3. take a mixing bowl put besan and all masala salt, red chili, baking powder, mango powder, carom seeds and mix
  4. add water in this mixture and make a thick batter
  5. keep this mixture 10 minutes
  6. now take oil for frying in a wok
  7. put brinjle in oil and half fry on medium to high heat
  8. than remove out and let it cool down
  9. now coated these brinjles besan batter and fry on medium heat until golden brown colour
  10. now take a knife make a cut in center
  11. fill chaat masala and chopped onions and serve

My Tip:

Carefully frying time some time brinjle burst
