ABOUT Sambhar vada RECIPE

A tangy sambhar, crispy vada and spicy chutney.

Ingredients Serving: 10

  1. Urad dal- 1 kg
  2. Toor dal- 2 bowls
  3. Chana daal- 2 tbsp
  4. Red chillies and red chilli powder- as per taste
  5. Vegetables used:
  6. Bottlegourd- 1/4 cup chopped
  7. Onion- 1 sliced
  8. Tomatoes- 5 medium sized
  9. Hing- a pinch
  10. Sambhar masala- 2 tbsp
  11. Green chilles- 2
  12. Ginger- 1 tbsp
  13. Oil- as required
  14. Ginger and garlic- 1 tbsp
  15. Oil- as required
  16. Curry leaves- a few
  17. For chutney:
  18. Chana daalia- 1/4 cup
  19. Mustard seeds- 1/2 tsp
  20. Curry leaves- a few
  21. Dessicated coconut- 1/4 cup
  22. Whole chillies- 2
  23. Salt to taste


  1. Wash and soak the urad dal and chana dal overnight. Next day, grind the dal and add the chopped chilles and ginger.
  2. Pressure cook the toor dal with chopped onion, sambhar masala, hing, haldi and water till 3 whistles blow.
  3. For the tadka, chop the tomatoes and keep aside.
  4. Take 4 spoons oil in a pan and heat it, add little mustard seeds, kadi patta and the chopped tomatoes. Stir it a little then add it to our cooked dal.
  5. Now in hot oil, fry these vadas. (I dip the end of rolling pin in hot oil and then make a hole in vada) or with the help of medu vada maker, strain them till they get little brown and crisp.
  6. To prepare the chutney, take the chana daalia, dessicated coconut, whole red chilles salt and little water. Grind it to a coarse paste in the blender.
  7. Serve it hot for best taste.
