ABOUT Crispy Injimanga Pickle(Mango Ginger) RECIPE

Maa, inji/Mango Ginger is a root vegetable and looks like ginger which is good for pickling.It’s a member of the ginger family that is not as widely known. That hit of raw mango along with the crunch of ginger is a delicious combination, a true marvel of nature. I have always seen my mother and mother in law use this injimanaga for fish curry which taste really delicious, I wanted to try this differently hence thought of making pickle which is very simple and quick.

Ingredients Serving: 5

  1. Mango Ginger(Inji Manga)- 4 big pieces
  2. Chilly powder- 1 tbsp (spicy one) and for color Kashmiri chilly - 2 tsp
  3. Jaggery- 1 tbsp grated or powdered
  4. Asafoetida- 2 tbsp
  5. Mustard seeds- 1 tsp
  6. Sesame Oil- 2- 3 tbsp
  7. Dry Mango Powde- 1 tbsp
  8. Salt to taste

Instructions

  1. Grate Mango Ginger and set aside
  2. Heat oil in a kadai, add mustard seeds and allow it to splutter and then add Asafoetida, fry for 1 min
  3. Add grated Ginger Mango and fry for 2 mins, add both red chilly powder and salt fry for another 2mins, add dry mango powder and jaggery, stir well and remove from fire.
  4. Serve with Dal rice or khichadi
