These are delicious tartlets, filled with lemon curd.

Lemon Curd Tartlets

Ingredients to make Lemon Curd Tartlets

  • FOR THE TARTS
  • 1.5 cups flour
  • 1/2 cup sugar
  • 10 tbsp cold butter
  • 1 egg yolk
  • 2 tbsp ice cold water
  • FOR THE lemon CURD
  • 2 large eggs
  • 1/2 cup sugar
  • Zest of 1 lemon
  • 1/3 cup lemon juice
  • 2 tbsp butter

How to make Lemon Curd Tartlets

  1. TAKE 1.5 CUPS FLOUR, ADD 1/2 CUP SUGAR
  2. ADD 10 TBSP COLD CUT BUTTER
  3. RUB THE BUTTER INTO THE FLOUR
  4. THE TEXTURE SHOULD BECOME GRAINY LIKE THIS
  5. ADD1 EGG YOLK, 2 TBSP ICE COLD WATER, MIX & KNEAD INTO A DOUGH
  6. WRAP WITH CLING FILM, REFRIGERATE THE DOUGH FOR 30 MINS
  7. TAKE 2 EGGS, ADD 1/2 CUP SUGAR
  8. WHISK TILL PALE & FROTHY
  9. ADD THE ZEST OF 1 LEMON, 1/4 CUP LEMON JUICE
  10. PLACE THIS IN A DOUBLE BOILER
  11. WHISK FOR 10 MINS TILL THE CURD THICKENS
  12. ADD 2 TBSP BUTTER, MIX & REFRIGERATE THE MIX FOR 1 HOUR
  13. ROLL OUT THE CHILLED DOUGH
  14. CUT THE ROLLED OUT DOUGH INTO DESIRED SHAPES
  15. GENTLY PLACE IN MUFFIN MOULDS, PRICK HOLES
  16. BAKE IN A PREHEATED OVEN AT 180 DEGREES FOR 15-18 MINS UNTIL GOLDEN BROWN
  17. FILL THE TARTS WITH THE CHILLED LEMON CURD
  18. TRY THEM, THEY'RE YUM
