Ingredients to make Amiri Khaman

  • For Dhokla batter : Dry ingredients:-
  • besan (gramflour) : 1/2 cup
  • Grated ginger : 1 tsp
  • salt : 1/4 tsp
  • Powdered sugar : 1 tsp
  • Eno fruit salt : 1 sachet
  • Wet ingredients:
  • curd : 1/4 cup
  • Limejuice : 1 tsp
  • oil : 1 tbsp
  • water : 1/4 cup or little less
  • For Tempering:
  • oil : 1 tbsp
  • mustard seeds : 1/2 tsp
  • green chillies : 2 -3
  • curry leaves : 8-10
  • Other Ingredients:
  • pomegranate kernels : 2 tbsp
  • dessicated coconut : 1 tbsp
  • Nylon sev : 1 tbsp
  • salt : 1/4 tsp
  • sugar powder : 1tsp
  • Limejuice:1tsp

How to make Amiri Khaman

  1. In a bowl, mix together all the dry ingredients except Eno.
  2. Take another bowl and mix the wet ingredients. Now combine the two and mix well to form a smooth batter of pouring consistency.
  3. Grease a microwave proof bowl and keep ready.
  4. Now add eno in the batter and give it a quick stir, then transfer it immediately to the greased bowl. Cook it on microwave high for 4-5 minutes.
  5. Take it out and let it cool completely.
  6. In mean while you can prepare the tempering. Heat oil and add mustard seeds to it. Add in curry leaves and slit green chillies.
  7. Now demould the dhokla and crumble it in a bowl. Add pomegranate kernels and coconut and toss.
  8. Now pour the tempering over it and toss again. Your Amiri khaman is ready to enjoy.
  9. Transfer to the serving bowls and garnish with a layer of nylon sev .

My Tip:

You can make variations in making dhokla like make palak, suji dhokla etc and hence get palak khaman, suji khaman.
