Ingredients to make Aloo Vadiyan

  • mustard oil 3 tbsp
  • cumin seeds 1/2 tsp
  • onion 2
  • tomato 3
  • ginger Paste 1 tsp
  • green chilly 1
  • salt to taste
  • Deggi mirch 1 tsp
  • turmeric powder 3/4 tsp
  • coriander powder 2 tsp
  • cumin powder 1/2 tsp
  • urad dal vadi 1-2
  • potato 2
  • Garam masala 1/2 tsp
  • Chopped coriander 2 tbsp

How to make Aloo Vadiyan

  1. Heat the oil in a pressure cooker. Add jeera and vadi, fry the vadi on low flame, take it out and keep aside.
  2. In the same oil add onion paste and cook it untill brown. Mix all the spices in a bowl with half cup of water, add in cooked onion. Saute for 5-6 min.
  3. Add tomato, ginger, chilly paste and cook till the oil separates.
  4. Add fried vadi and chopped (cubes) potatoes, cook for two minutes, add 2 cups of water. Cover the lid and cook for one whistle. Off the flame.
  5. After 10 minutes open the lid, add chopped coriander and garam masala.
  6. Serve with roti, rice and lassi.

My Tip:

Frying the vadi is a must.
