ABOUT Shahi Tukda!! RECIPE

Shahi Tukda - Its literal translation means 'A piece of royal food'. It is a Toasted bread piece with added rich flavors of creamy rabri and Saffron. Shahi tukda is a easy peasy dessert that can be made in a jiffy for any occasion with minimal effort and ingredients. Moreover the stale/ old bread can be used. It is a flavorful, creamy and crunchy dessert. A great fusion of Rabri and double roti ka meetha, the popular dessert from Hyderabad.

Ingredients Serving: 4

  1. 1 liter full fat milk
  2. 1/2 to 3/4 cup Sugar
  3. 4 Cardamom pods crushed
  4. A pinch of Saffron, soaked in 1 tbsp warm milk
  5. 7 to 8 Bread slices
  6. Oil for deep frying
  7. 2 tbsp roasted and chopped nuts

Instructions

  1. In a deep non stick pan add the milk and bring this to a boil. Once boiled, add sugar and keep cooking on medium, stirring in intervals until reduced to half and thick. Later add the cardamom powder and saffron milk.
  2. Keep cooking this for 5 more minutes, turn off the heat and allow it to cool at room temperature. Once cooled it will thicken a bit more.
  3. Slice the bread into triangles after removing the edges. Meanwhile start heating up oil for deep frying, in a deep pan / kadai.
  4. Once it is hot, reduce the heat to medium. Deep fry the bread pieces until crispy and golden. Drain them on to a paper towel.
  5. On a plate / bowl add the pieces of fried bread and pour the thick rabri over it and garnish with nuts.
