About Baingan aaloo Recipe

This aloo baingain is a combination of spices and aachar, that is surely going to increase your appetite.

Baingan aaloo

Ingredients to make Baingan aaloo

  • potatoes - 4
  • Brinjal - 250 gm
  • onion - 1 Big
  • tomato - 3 medium
  • ginger garlic paste - 1 tbsp
  • Aachar - 1 tsp
  • cumin Seeds - 1 Tsp
  • saunf powder - 1 tbsp
  • red chilli powder - 1/2 tsp
  • haldi - 1/2 tsp
  • Pavbhaji masala - 1 tsp
  • Dhaniya powder - 1 tsp
  • Kasuri methi - 1 tsp
  • Black pepper powder - 1/2 tsp
  • Aamchur powder - 1/2 tsp
  • salt - as per taste
  • Coraiander
  • oil - As per requirement
  • Desi ghee - 1 tbsp

How to make Baingan aaloo

  1. cut patoto and bringal in small cubes and fry on medium flame until they get bit soft.
  2. Heat a pan, add desi ghee and 1 tbsp oil, once heat add cumin seeds saute for 30 sec and add saunf powder.
  3. Now add onion and saute till they look traslucent then add ginger garlic paste and saute untill they are bit brown
  4. Now add tomatoes and add all the dry masala and aachar and saute till the oil separates.
  5. Now add patoto and brinjal and cover with lid for 10 minutes.
  6. Garnish with coriander and serve hot with roti.
