About Arbi Teekha Masala Recipe

Arbi is the most common vegetable available during summers.As there are so many variations in making Arbi. Some like to have it in simple boiled form with the Tadka of heeng and carom seeds or some people just deep fry them with dry masalas! As i'am a little chatpati type of person so i have made this arbi tangy,spicy as well as tasty. Cutting arbi is a little fussy work as sometimes it causes irritation and itching on hands,so better to apply some coconut oil in your hands while peeling and cutting the arbi.

Arbi Teekha Masala

Ingredients to make Arbi Teekha Masala

  • Arbi - 1/2 kg
  • onions Chopped - 2 medium sized
  • tomatoes grind them first - 3 medium sized
  • garlic Cloves - 4 to 5(Finely chopped)
  • Green chilies chopped - 2 to 3 (optional)
  • salt as per taste
  • sugar- 1/2 tsp
  • Red chili powder - 1 tsp
  • cumin seeds - 1 tsp
  • coriander powder - 1 tsp
  • mango powder - 2 tsp
  • oil for frying

How to make Arbi Teekha Masala

  1. TAKE 1/2 KG ARBI, PEEL AND CUT IN THIN SLICES. WASH IT WITH RUNNY WATER AND STRAIN THE WATER.
  2. TAKE OIL IN A DEEP WOK. HEAT IT UP AND FRY THE ARBI IN BATCHES. TAKE 8 TO 9 ARBI IN ONE BATCH.
  3. AFTER FRYING PLACE THE ARBIS ON AN ABSORBENT PAPER.
  4. ADD 2 SLICED ONIONS, FEW CHOPPED GREEN CHILIES,6 TO 7 PIECES OF CHOPPED GARLIC AND 1 TSP CUMIN SEEDS
  5. ADD 3 GROUNDED TOMATO PASTE. STIR IT , TILL IT STARTS LEAVING OIL.
  6. ADD TURMERIC PD, SALT, CORIANDER PD, SUGAR, MANGO PD AND RED CHILI POWDER AND STIR IT CONTINUOUSLY.
  7. NOW ADD YOUR FRIED ARBI INTO THE MASALA AND MIX IT WELL
  8. STIR IT PROPERLY FOR MORE FEW MINUTES.
