About Kakdichi koshimbir Recipe

Kakdi Chi Koshimbir is a famous Maharashtrian Salad which is served often in summer with every meal. The cucumber and curd being the anti oxidant and coolant keeps the stomach cool and digestive system. This is my ever time favourite recipe which made by my " Aai " it is very simple recipe .

Kakdichi koshimbir

Ingredients to make Kakdichi koshimbir

  • yogurt / Curd1 cup
  • Cucunber 2
  • tomato 1
  • onion 1
  • asafoetida/Hing
  • curry leaves 2-4
  • cumin seeds 1/2 tbsp
  • Musterd seeds 1 tbsp
  • salt
  • Green chopped chilli 1
  • Suger 1 tbsp
  • oil 1 tbsp
  • chopped coriander leaves 1 tbsp

How to make Kakdichi koshimbir

  1. Peel and chop cucumber in medium sized pieces
  2. Chopped tomato finely .
  3. In a bowl add chopped cucumber,onion and tomatoes. Mix everything nicely.
  4. Now add curd/yogurt in the above mix. Keep this curd,
  5. Start preparing tempering. Heat oil in a pan.Add cumin seeds and mustard seeds. Let them crackle.
  6. Now, add curry leaves and green chillies. Fry for 1-2 mins without burning them.
  7. Switch off the flame and add asafoetida. Temper koshimbir.
  8. pour this tadka on the Tomato-Onion-cucumbar .
  9. Add salt and sugar, mix everything . add coriander leaves.
  10. Refrigerate it for 10-12 mins.Koshimbir is ready to serve
