Ingredients Serving: 8

  1. Low fat milk 2 lt
  2. Moong dal 1/2 cup
  3. Sugar 2 cups
  4. Ghee 1/2 tsp
  5. Green cardamom 2
  6. Bay leaf 1/2
  7. Cashews and raisins 1/4 cup soaked in water
  8. Almond slivers 1/2 cup

Instructions

  1. Soak the moong dal in water for some time and drain out.
  2. Add ghee in a dekchi.
  3. Add the moong dal and stir it along with ghee taking care that the grains don't get burnt.Set aside.
  4. Boil the milk.
  5. Add the moong dal when the milk comes to a boil.Throw in bay leaves,cardomoms and a bit of ghee.
  6. Keep on stirring so that the dals r boiled properly and the milk thickens to almost three quarters of it's original quantity.
  7. Add the sugar and the milk only towards the end, and keep stirring continuously so that the payesh doesn't get burnt at the bottom.
  8. Take it off the fire when your desired thickness and consistency has been achieved.
  9. Garnish with raisins and cashew nuts. Serve it cold.Many prefer to eat payesh serving hot, just after it has been taken off the fire, so the intensity of sizzle is up to you.
