Malayisa* Foxtail is very rich in phosphorus and vitamin (Vitamin B1) in addition to all the general millet characteristics (gluten-free, low glycemic index, high fibre, etc). Foxtail Millet is also called Navane (in Kannada), Thenai (in Tamil), Korralu (in Telugu) and Kakum (in Hindi) and sweet potatoes and foxtail millet may seem like an unlikely pairing but it's a classic flavor mashup in many Asian kitchens. Ingredients Serving: 3

  1. Foxtail millet rice;
  2. Foxtail Millet Rice - 1 cup
  3. Water - 2 - 1/2 cups (2.5 measure water for every measure of millet)
  4. Salt to taste -1/2 tsp
  5. Sweet potatao stir fry ;
  6. purple sweet potatoes, peeled - 1lb
  7. fresh ginger, minced - 1 tsp
  8. cloves, minced - 2tsp
  9. ground cumin - 2 tsp
  10. ground turmeric - 1/2 tsp
  11. ground cinnamon - 1/4 tsp
  12. ground coriander - 1 tsp
  13. coconut oil. - 2 tsp
  14. Salt - to taste

Instructions

  1. Foxtail millet rice method; Wash Foxtail Millet Rice. I have found that only wash is sufficient
  2. Add 2.5 measures of water for every measure of Foxtail Millet Rice. This measure gives a firm cooked rice. If you like it soft, use 3 measures for every measure of rice.
  3. I use pressure cooker to cook the rice. 1 whistle at high flame and 2 whistles in low flame (approx 10 mins). After third whistle, take it off flame and let the millet cook in its own steam. The cooker cools in about 10 minutes.
  4. Use the millet rice to prepare various dishes. You can also use this as regular rice and serve with gravy
  5. Sweet potato stir fry recipe method; Place the sliced sweet potatoes in a water-filled saucepan and bring to a light boil.
  6. Simmer them for about 6 to 8 minutes, then transfer to cold water.
  7. Add the sweet potatoes and sprinkle with all of the spices.
  8. Heat coconut oil in a skillet.Add the ginger and garlic and cook over medium-low heat 2 to 3 minutes.
  9. Toss everything and cook another 4 to 5 minutes, until the sweet potatoes are fork tender.
  10. Adjust seasoning to taste and serve I adding in top tempering seasoning like uraldhall,dry chilli, curry leaves,,, i like crunchiness ,,,
