ABOUT Foxtail Millet Masala Lemon Rice. RECIPE

Millet with low glycemic value is very good for maintaining Sugar levels. A very good source of Iron and other minerals is rich in vitamin B 3. Helps in digestion and a full healthy meal.

Ingredients Serving: 2

  1. Foxtail millet 1 cup
  2. Water 1 1 /2 cup
  3. Ground nuts 1/4 Cup
  4. Onions 2
  5. Capsicum 1/2
  6. Broccoli florets chopped 3/4 cup
  7. Urad daal 2 tsp
  8. Garlic chopped 1 tsp
  9. Ginger grated 1 tsp
  10. Curry patta few
  11. Cloves 6 to 8
  12. Zeera [cumin seeds] 1 tsp
  13. coriander powder 1 tsp
  14. Green chilli chopped 2
  15. Sesame seeds roasted 1 tbsp
  16. Oil 1 tbsp ( preferably Sesame seeds)
  17. Coriander leaves finely chopped 2 tsp
  18. Pomegranate seeds for garnishing.
  19. Lemon juice 1 tbsp

Instructions

  1. Wash and pressure cook Millet by adding 1 1/2 cup water and salt to taste for 5 to 6 whistles. It should be in granules.
  2. Cool in a plate.
  3. Heat oil in a heavy bottom pan, add cloves, let it splitter.
  4. Now add zeera, garlic , add ground nuts and urad daal. Add Sesame seeds.
  5. As it turns brown, add chopped Broccoli and chopped Capsicums.
  6. Add ginger, adjust all masala. Stir fry for 5 minutes or till Broccoli gets cooked.
  7. Now add cooked and cooled foxtail millet to the pan. Mix well.
  8. Add lemon juice and mix.
  9. Cover the pan for 5 minutes. Add pure ghee, give a stir and serve with garnish of coriander leaves and Pomegranate seeds.
  10. Best goes with curd / buttermilk.
