ABOUT Foxtail millet Vegetable Kichadi(OPOS method) RECIPE

This is a healthy kichadi made with foxtailmillet, moong dal and vegetables. It can be done as one pot meal.

Ingredients Serving: 3

  1. foxtail millet 1.5 cups
  2. Moong dal 1/2 cup
  3. beans carrot onion 1/2 cup
  4. Water 4.5 cups
  5. Green chilli 3
  6. ginger 1 piece
  7. Turmeric powder 1/2 teaspoon
  8. Oil 2 tablespoons
  9. Mustard seeds , urad dal 1/2 teaspoon each
  10. Curry leaves few
  11. Salt to taste

Instructions

  1. in a cooker add oil and once hot add mustard seeds and allow it to splutter. Then add urad dal and when golden ,add curry leaves, green chilli, ginger and vegetables.
  2. Saute the vegetables for few minutes .Add salt and turmeric powder.
  3. Then add required water and let it boil. Now add the moong dal and foxtail millet .
  4. Close the cooker and allow it to cook for 3 whistles in medium flame.
