Ingredients Serving: 4

  1. 13/4 cups roasted Phool Makhanas
  2. For puree
  3. 1 tbsp butter
  4. one teaspoon oil
  5. half teaspoon cumin seeds
  6. half teaspoon fennel powder
  7. one teaspoon ginger garlic paste
  8. two small onions roughly chop
  9. 3 tomatoes roughly chopped
  10. 2 green chillies
  11. 1/4 Cup water
  12. one teaspoon Kashmiri red chilli powder
  13. half teaspoon turmeric
  14. 1/2 teaspoon salt
  15. For Gravy
  16. 1 tbsp butter
  17. one teaspoon oil
  18. salt to taste
  19. half teaspoon sugar
  20. 2 tbsp cream
  21. one teaspoon crushed kasuri methi
  22. 2 tbsp chopped coriander leaves
  23. half teaspoon Kashmiri red chilli powder
  24. half teaspoon coriander powder
  25. one teaspoon Garam masala
  26. For Garnish
  27. 1 tablespoon cream
  28. 2 tbsp chopped coriander leaves

Instructions

  1. HEAT OIL AND BUTTER IN A PAN, SPLUTTER CUMIN SEEDS
  2. ADD GINGER GARLIC PASTE, GREEN CHILLIES AND ONIONS
  3. ADD SALT AND SAUTE UNTIL ONIONS ARE TRANSLUCENT
  4. ADD SPICE POWDERS AND MIX WELL
  5. ADD CHOPPED TOMATOES AND MIX
  6. ADD CASHEWS AND SAUTE UNTIL TOMATOES ARE SOFT
  7. ALLOW TO COOL COMPLETELY
  8. ADD WATER AND GRIND TO FORM PUREE
  9. HEAT OIL, BUTTER IN A PAN, ADD GROUND PUREE
  10. SAUTE UNTIL OIL STARTS LEAVING SIDES
  11. ADD SPICE POWDERS SALT AND SUGAR. MIX WELL
  12. ADD CREAM, KASURI METHI, CORIANDER LEAVES AND MIX WELL
  13. ADD ROASTED PHOOL MAKHANAS AND COOK FOR 2-3 MINUTES ON LOW FLAME
  14. GARNISH WITH CREAM AND CORIANDER LEAVES. SERVE HOT WITH ROTI OR NAAN
