ABOUT Classic Mexican Street Style Corn on the RECIPE

Mexican Corn on the Cob (also called Mexican Street Corn and Elote Corn) is a favourite street food in Mexico. It's covered in creamy mayonnaise and topped with cilantro, lime juice, cojita cheese and paprika with unbeatable flavour.

Ingredients Serving: 2

  1. 2 shucked cobs of corn
  2. 2 tbsp salted butter
  3. Few chopped cilantro
  4. 2 tsp smoked paprika
  5. 1/4 tsp garlic powder
  6. 1/4 cup shredded cheese (preferably cojita cheese)
  7. 1 lime
  8. For eggless mayonnaise- 1/4 cup chilled full cream milk
  9. 1/2 cup chilled vegetable oil
  10. 1 tsp lemon juice
  11. 1/4 tsp skinless mustard seeds
  12. salt to taste

Instructions

  1. JUST OPEN THE CORN, PULL BACK THE HUSK, REMOVE ALL SILKS (KEEP THE HUSK INTACT).
  2. TIE THE HUSK ON OTHER END.
  3. BOIL CORNS IN SALTED WATER FOR 8-10 MINUTES.
  4. DRAIN THE CORNS.
  5. IN A MIXER JAR BLEND- 1/4 CUP CHILLED FULL CREAM MILK
  6. 1/2 CUP CHILLED VEGETABLE OIL
  7. 1 TSP LEMON JUICE
  8. SALT AND SKINLESS MUSTARD SEEDS TO TASTE.
  9. BLEND IT INTO A THICK PASTE. IT BECOMES MORE THICK IF WE REFRIGERATE IT AFTER BLENDING.
  10. APPLY SOFT BUTTER OVER WHOLE CORN.
  11. AFTERWARDS APPLY A THICK COAT OF MAYONNAISE.
  12. SPRINKLE FEW CHOPPED CILANTRO.
  13. SPRINKLE THE SMOKED PAPRIKA AND GARLIC POWDER MIXTURE.
  14. SPRINKLE ALL OVER WITH THE CHEESE (PREFERABLY COJITA CHEESE BUT I USED CHEDDAR CHEESE)
  15. SQUEEZE ONE LIME JUICE OVER EACH COB.
