ABOUT Bread Kulchas RECIPE

Bakery style bread kulchas a very popular north Indian breads served with spicy chickpea curry and also is a famous street food of Delhi where these bread kulchas are served with thick, tangy, spicy dry pea curry topped with onions and lemon juice. These can be cooked easily on cooktop too, without any oven.

Ingredients Serving: 6

  1. Dry yeast 1+1/2 tesp
  2. Warm milk 2/3 cup
  3. sugar 1 tbsp
  4. All purpose flour 2 cups
  5. Milk powder 1/3 cup
  6. salt 1 tesp
  7. Fresh cream 1/4 cup
  8. butter 1+1/2 tbsp
  9. oil 1 tbsp

Instructions

  1. TO 2/3 CUP WARM MILK ADD 1 TBSP SUGAR AND 1+1/2 TESP DRY YEAST. MIX AND REST THE MIXTURE TO BLOOM.
  2. IN A KNEADING PLATE TAKE 2 CUPS OF ALL PURPOSE FLOUR, 1/3 CUP MILK POWDER AND 1 TESP SALT.
  3. MIX AND ADD BLOOMED YEAST MIXTURE.
  4. ADD 1/4 CUP FRESH CREAM AND MIX WELL.
  5. KNEAD WITH HANDS.
  6. DOUGH WOULD BE VERY STICKY. GRADUALLY ADD 1+1/2 TBSP BUTTER AND KNEAD FOR 10 MINUTES.
  7. DOUGH WOULD GET VERY SOFT AND SMOOTH.
  8. REST THE DOUGH COVERED IN A GREASED BOWL TO PROOF FOR AN HOUR.
  9. TAKE OUT THE RAISED DOUGH ONTO A FLOURED SURFACE AND KNOCK DOWN.
  10. DIVIDE THE DOUGH INTO 6 EQUAL PORTIONS.
  11. ROLL DOWN EACH BALL INTO A 4"-5" DISC.
  12. BRUSH ALL ROLLED KULCHAS WITH OIL.
  13. REST THEM FOR HALF AN HOUR TO PROVE AGAIN.
  14. PLACE A KULCHA ON MEDIUM HOT TAWA AND COOK COVERED ON LOW FOR 2 MINUTES.
  15. FLIP AND COOK COVERED FOR OTHER 1 MINUTE ON LOW.
  16. KULCHA IS READY. KEEP IT COVERED TO REMAIN SOFT AND LET THEM COOL COMPLETELY.
  17. PREPARE ALL KULCHAS SIMILARLY.
