ABOUT Spicy Garlic Sev RECIPE

This is a thick sev called ganthiya in gujarati made by adding fresh garlic which gives excellent flavour.

Ingredients Serving: 10

  1. Gram flour 2 cups
  2. Garlic cloves 15-20
  3. Cumin seeds 1 tsp
  4. Black pepper 10-12
  5. Cloves 5
  6. Turmeric 1/2 tsp
  7. Asafetida 1/4 tsp
  8. Red chilli powder 2 tsp
  9. Oil 1 tbsp+ for frying
  10. Salt to taste

Instructions

  1. ADD 1 TSP CUMIN SEEDS, 5 CLOVES, 10-12 PEPPERCORNS TO A MIXER JAR, BLEND TO MAKE A POWDER
  2. ADD 15-20 GARLIC CLOVES ALONG WITH 2 TBSP WATER, BLEND TILL SMOOTH
  3. TAKE 2 CUPS GRAM FLOUR, ADD THE GARLIC MASALA PASTE
  4. ADD SALT TO TASTE, 2 TSP RED CHILLI POWDER
  5. ADD 1/2 TSP TURMERIC POWDER, 1/4 TSP ASAFOETIDA
  6. ADD 1 TBSP OIL, MIX WELL
  7. ADD WATER AS REQUIRED, KNEAD A SOFT DOUGH
  8. WHISK THE DOUGH IN A CIRCULAR MOTION LIKE THIS
  9. GREASE A SEV PRESS WITH A LITTLE OIL
  10. PUT THE DOUGH INTO IT
  11. PRESS OUT THE SEV INTO HOT OIL
  12. FLIP & FRY ON HIGH HEAT FROM BOTH SIDES UNTIL GOLDEN BROWN & CRISP
  13. PLACE THE READY SEV ON TISSUE PAPER, ALLOW IT TO COOL
  14. CRUSH THE FRIED SEV BUNCHES LIGHTLY INTO SMALL PIECES
  15. SEE HOW CRISP THE SEV HAS TURNED OUT, STORE IN AN AIR TIGHT CONTAINER, SERVE WITH TEA
