Ingredients Serving: 3

  1. Whole wheat flour 2 cups
  2. Salt required
  3. Ajwain 1 tsp
  4. Water 3/4 cups

Instructions

  1. ADD 2 CUPS OF WHOLE WHEAT FLOUR AND REQUIRED SALT
  2. ADD CRUSHED AJWAIN
  3. MIX WELL
  4. ADD WATER AND KNEAD SOFT DOUGH. ADDING REASONABLE WATER HELPS TO GET SOFT PHULKAS BUT CARE SHOULD BE TAKEN TO GET CORRECT CONSISTENCY. OTHERWISE ITS DIFFICULT TO ROLL ROTIS. IF YOU ADD MORE WATER ADD REQUIRED WHEAT OR SOOJI TO ABSORB EXCESS WATER
  5. DOUGH SHOULD NOT BE STICKY
  6. REST IT FOR 15-30 MINS. RESTING THE DOUGH IS NECESSARY TO HELP WHEAT ABSORB WATER.
  7. SHAPE SMALL BALLS
  8. ROLL SMALL PHULKA. IF THE PHULKAS ARE BIG IT WILL BE DIFFICULT TO COOK ON DIRECT FLAME
  9. COOK PULKHA ON HOT TAWA.
  10. FLIP ON BOTH SIDES. HALF COOK PHULKA
  11. USE TONGS TO COOK ON DIRECT FLAME. DON'T OVER HEAT AS PHULKAS WILL NOT BE SOFT IF IT LOSE MOISTURE. JUST FOR PUFF
