ABOUT Punjabi Style Baingan Bharta RECIPE

Roasted brinjal folded in a well done stir fried onion tomatoes and corriander.Flavour of one dried chilli in saute with green peas and onions Peas add the taste and are healthy too.Spiced basic this tastes yumm with parathas roti,phulkas.

Ingredients Serving: 3

  1. 250 grams brinjal for bharta
  2. 2 onions square chopped
  3. 2 tomatoes chopped fine
  4. 2tblspn oil or ghee as preferred
  5. Curry leaves
  6. 1 dried red chilli
  7. Salt to taste
  8. 2tspn red chilli powder
  9. 2tspn cummin corrianderpowder
  10. Green chillies optional

Instructions

  1. ROAST 250 GMS EGGPLANT ON A MESH ON DIRECT FLAME, WHEN DONE, COOL & PEEL OFF THE SKIN
  2. HEAT 2 TBSP OIL, 1 DRY RED CHILLI, 2 CHOPPED ONIONS, FRY TILL TRANSLUCENT
  3. ADD 1 CUP PEAS, SALT TO TASTE
  4. ADD 2 TSP EACH OF RED CHILLI, CUMIN- CORIANDER POWDERS
  5. ADD 2 CHOPPED TOMATOES, FRY TILL SOFT
  6. ADD 2 TBSP CHOPPED CORIANDER, THE ROASTED EGGPLANT
  7. MASH & FOLD INTO THE MASALA, COVER & COOK FOR 3-4 MINS
  8. ADD 2 SLIT GREEN CHILLIES, TOSS & TAKE OFF HEAT
