ABOUT dahi baigan RECIPE

It has that soft nutty tanginess that comes from yogurt, this is a perfect side dish to be served with roti or pulao.

Ingredients Serving: 2

  1. 250 gram eggplant
  2. 1 cup dahi [curd]
  3. Cumin seeds - 1 tsp
  4. Asafoetida - 1/2 tsp
  5. Dry red chillies - 2
  6. Bay leaf - 1
  7. Cardamom pods - 2
  8. curry leaves - 10
  9. oil

Instructions

  1. WASH THE BRINJALS, AND CUT INTO MIDDLE
  2. THE CUTS SHOULD BE LIKE THIS.
  3. HEAT OIL IN A PAN AND PUT OF BRINJAL INTO IT. FRY THEM UNTIL THEY TURN BROWN IN COLOUR.
  4. HEAT OIL IN PAN, ADD CUMIN SEEDS, ASAFOETIDA, DRY RED CHILLIES, CURRY LEAVES, CARDAMOM, LET THEM SPLUTTER.
  5. NOW PUT TURMERIC POWDER, CORIANDER POWDER, RED CHILLI POWDER 
  6. SAUTE A FEW SECONDS AND ADD WATER
  7. ADD 1 CUP DAHI MIX IT WELL
  8. ADD SALT
  9. SUMMER FOR 4/5 MINUTES THEN ADD EGGPLANT
  10. COOK IT FOR 2-3 MINUTES ON LOW FLAME. 
  11. GARNISH WITH CORIANDER
